Rollatini, known in Italy as involtini, is a classic Italian dish traditionally made by rolling thin slices of cooked eggplant with Italian cheeses and baking them to perfection. Inspired by the popularity of our eggplant rollatini recipe, I decided to put a twist on the original by using zucchini instead—an abundant and versatile vegetable this time of year.
